#KitchenClearout December roundup & January linky


Christmas is usually a time for stuffing our kitchen cupboards to full capacity rather than trying to make some space in them but I still have a lovely roundup of #KitchenClearout recipes from December to share with you. If you have any exciting ways of using up all the leftover festive fayre like mincemeat or Christmas cake, I'm all ears so make sure you link up at the end of the post !


First up last month was this Spicy Potato & Tomato Tart which used up a couple of jars that were lurking in the cupboard - spicy red pepper paste and sun-dried tomatoes. It also used up some slightly squishy tomatoes and can be adapted to clear out pretty much whatever is in your fridge ! Not much of a looker but it tasted great.


Peanut Butter with Sunflower, Pumpkin and Flax Seed  didn't appeal to the Madhouse kids so a pretty much full jar had been lingering at the back of the cupboard for months. I managed to use it up in these no-bake Chocolate Peanut Butter Fridge Bars which disappeared in record time ! The verdict was, they tasted just like homemade Reese's Peanut Butter Cups.


Crunchy Choc Chip Cookies were received with equal enthusiasm and were great for using up a box of cereal that nobody really liked and some coconut water that was taking up valuable fridge space in the run up to Christmas.


Proving that you can never have too many sweet treats at Christmas, more cereal and coconut water went into these No-Bake Choc Mint Nibbles, which made a nice change from the usual festive peppermint creams.


Alison from Dragons & Fairy Dust had the perfect way to use up the leftover turkey in this Spiced Turkey Pie. It looks gorgeous and very similar to the Moroccan Bastilla that I made a while ago that was a big hit too, so I'll definitely have to try this new version.


Some rather wrinkly apples were turned into these delicious Brown Butter Apple Cinnamon Muffins, which also used up coconut water (which I've been using instead of milk in baking lately) and the end of a bag of coconut sugar. I thought I'd get to eat all of these but the kids loved them too !


Galina from Chez Maximka provided the recipe for these delicious-sounding Irish Cream Brownies - I could just eat one of those right now, along with a glass of Baileys. This used up the end of a jar of hazelnut chocolate spread, which is something that never lasts for very long in our house !


A Nigerian recipe, Jollof Rice, which is a bit like paella or jambalaya, started off as a #readcookeat recipe but ended up being a great way of clearing out the veg box in the fridge too !


Galina finished off this month's round-up with a delicious Chocolate Chip Bread & Butter Pudding that was an ingenious way of using up an impulse buy from the men in her life !

I'm sure I'm not alone in thinking that my kitchen cupboards look fit to burst so I'll be making a concerted effort to make some space in the next few weeks. Feel free to link up any recipes that you used to clear out your Christmas leftovers last week.

  1. I've changed how I cook/bake for this year I've now made a note of all the dates so I know exactly what needs using up in what order so hopefully should be less waste!
