Bisto Midweek Meal Challenge recipe #1 : Sizzled Turkey Steaks with Leek & Turkey Gravy


When I looked through the recipe cards provided by Bisto for their Midweek Challenge, I was immediately struck by two things. The first was that they all use store cupboard essentials so I'd be able to recreate most of them without going out on a special shopping trip. The second was that they are all very similar to meals that I already cook but with one or two tweaks. I therefore decided to follow the recipes to the letter to see if they'd be an improvement on my usual dishes.

Sizzled Turkey Steaks with Leek & Turkey Gravy

Serves: 4

Preparation time: 10 minutes
Cooking time: 25 minutes


Ingredients

• 6 heaped teaspoons Bisto Turkey Gravy
• 1 large leek, thinly sliced
• 1kg (2lb 4oz) potatoes, cut into chunks
• 4 x 125g (5oz) turkey breast steaks
• 2 teaspoons vegetable oil
• Finely grated zest and juice of 1 lemon
• Few sprigs of rosemary or thyme
• 1 head broccoli, broken into florets
• 200g (7oz) frozen peas
• 2 tablespoons milk
• Salt and freshly ground black pepper

Method


(These recipes are simple enough that you can get the kids involved - it's a great way to show them some gold old-fashioned home cooking from scratch that they can recreate when they're older.)


1. Sprinkle the 6 teaspoons of Bisto Turkey Gravy Granules into a saucepan and add 450ml (3/4 pint) boiling water, stirring until thickened and smooth. Add the leek, then, cook over a very low heat for 15-20 minutes, stirring occasionally. Add a little extra water if the gravy reduces down too much.

2. Meanwhile, put the potatoes into a large saucepan. Cover with boiling water and add a pinch of salt. Cover and simmer for 15-20 minutes, until tender.


3. Preheat a char-grill pan or the grill. Brush both sides of the turkey steaks with vegetable oil, then char-grill or grill on one side for 4-5 minutes. Turn over and sprinkle with the lemon zest, lemon juice and herbs. Cook for another few minutes until done. Check with a sharp knife – the juices should run clear.


4. At the same time, cook the broccoli for 5-6 minutes in boiling water, adding the peas for the final 2 minutes. Drain the potatoes, then, mash them with the milk and season with black pepper. Serve with the turkey steaks and vegetables, with the leek and turkey gravy poured over.

I would usually cook the leeks (or other veg) then add the gravy granules to the cooking water at the very end, thereby saving all the vitamins that have come out into the water during cooking, but I'd never thought of cooking vegetables from raw in the gravy. It works just as well though and is easier to stir to get rid of lumps if you prepare the gravy before you put in the veg, so I'll definitely be adopting this technique from now on.

The whole family loved the meal and it was a great way of getting lots of veg on their plates !
