Another totally simple and quick recipe idea that can have a delicious light lunch or supper on your plate within minutes. We used ingredients that everyone at The Madhouse loves, but you could make these with just about anything you fancy.
Goats Cheese, Mushroom & Parma Ham Filo Parcels
a pack of Filo pastry
a pack of Parma ham
3 or 4 mushrooms
1/2 a Capricorn goats cheese
a little olive oil
Chop the mushrooms into small pieces and gently fry in a little olive oil (or butter if you're not counting the calories !). Cut the filo pastry into large squares. Make a pile of mushrooms and chopped Parma ham in the middle of the square of filo pastry and top with a generous chunk of goats cheese.
Fold the four corners of the filo pastry in to the middle, brush with a little olive oil and bake in the oven at 180°C for ten minutes until the pastry is golden and crispy.
Serve warm with salad.
