Heinz Mayonnaise review (and Mayonnaise Baked Chicken recipe)

Heinz have just re-launched their mayonnaise, which is now made with free range eggs and also offers a money back guarantee (until the end of October), so it's the perfect time to try it out. (For more details on the money back guarantee and terms and conditions, go to http://www.heinz.co.uk/ )

Whether on your sandwiches, in your salads or on your BBQ burger bun, Heinz mayonnaise has been blended together with over 140 years of experience to create a delicious, creamy mayonnaise that adds an enhanced flavour to all your favourite dishes. But did you know that you can also use it in cooking ? When perusing an American cookery book, I was surprised to see a recipe in which you covered chicken pieces in a mixture of mayonnaise blended with spices before baking it in the oven. I thought it would be disgusting but decided to give it a try anyway and was astounded to see that it makes absolutely delicious, beautifully moist chicken. Trust me, give it a go ! In fact, some of the flavoured Heinz Mayonnaises - Deli Mayo Caramelised Onion, Roasted Garlic, Caramelised Onion and Hint of Chilli flavour - would be absolutely ideal for this, as well as adding some zing to your sandwiches.

When we tried it, the Heinz mayonnaise seemed ultra-bright white to me, but that's because I'm used to the pale yellow mayo that is the norm in France and that (French) Madhouse Daddy Mike eats by the bucketload on his chips ! (I'm still not 100% sure why there's such a difference in colour between the two countries, but I think it's because they often add mustard to the mix.) But tastewise, it's lovely - lighter and creamier than the French version and even Madhouse Daddy Mike gave it a thumbs up (and you know what the French think of English cuisine !).

To mark the launch of their new mayonnaise, Heinz are inviting bloggers to tell them about their best moments of the summer along with a delicious summer dish using Heinz mayonnaise. Well, we haven't had much of a summer this year so a lot of the outdoor activities that we had planned fell flat but, not to be outwitted by a few (a few ?!) showers of rain, we decided to have an indoor picnic instead. We laid out a big rug on the lounge floor, set out paper plates and all sat on the floor eating picnic food around it. The kids loved it and thought it was even more fun than a normal outdoor picnic !

As for a recipe, I'll come back to my mayonnaise-baked chicken I told you about.

Blend 4 tbsp Heinz Mayonnaise with a shake of chilli flakes, a shake of garlic pepper and a pinch of salt. Take one chicken breast per person and smother it in the herby mayonnaise, then dip it in parmesan on both sides, before baking in the oven for 30 minutes or until cooked right through. (For a variation, replace the chicken and parmesan with salmon fillets and breadcrumbs and add a squirt of lemon juice to the mayonnaise mix.) The chicken can be eaten hot or cold with a salad.

If you're worried about the calories, you can get a Light Heinz Mayonnaise version, which is great news too.

I'll be back next week with an absolutely fabulous giveaway, where you can win a luxury top-of-the-range picnic basket and a year’s supply of delicious Heinz mayonnaise so watch this space ! (I'm going to have to start entering my own giveaways, I think !)
